Apple Carrot Muffins
Introduction

Steps
1. Mix oat milk and lemon juice and. Set aside.
2. Grate the apple and carrot and Chop up the walnuts. Set these aside as well.
3. Combine the GF flour, flaxseed, tapioca flour, bicarb, baking powder, salt and mix together.
4. In a separate bowl, whisk together eggs, olive oil, maple syrup and oat milk mix.
5. Mix the wet ingredient mixture into the dry mixture. As you mix,fold in the carrots, apples and walnuts.
6. Put mixture into muffin tin and bake for 30 minutes, or until the tops are puffed up in the centre and golden brown.
7. Great for freezing after cooled.

2 carrot (medium)
1 apple (medium)
½ cup oat milk
1 tablespoon lemon juice
1 cup walnuts
1 ⅓ cups GF flour
2 tablespoon ground flaxseed
2 tablespoons tapoica flour
1 teaspoon baking powder (gluten free)
½ teaspoon baking soda (bicarb soda)
Pinch sea salt
3 egg ( or can use 3 tablespoons of chia and 3 x tablespoons water and set aside)
3 tablespoons extra virgin olive oil
¼ cup maple syrup
