Chocolate Chip Oat cups
Introduction

Steps
Preheat oven to 175 c degrees
Shred zucchini and let stand. Squeeze out excess water with teatowel or cheese cloth.
If swopping out egg for flaxseed prepare and set aside.
Combine all the liquid ingredients, maple syrup, mashed banana, flax egg and vanilla in a large bowl. Mix well
Add dry ingredients: oats, chia seeds, baking powder, cinnamon and salt.
Fold in the zucchini and chocolate chips.
Spoon mixture into lined muffin tins. Top with extra chocolate chips.
Bake 25 minutes, or until a toothpick comes out clean.
Let it cool on a wire rack and enjoy!

Ingredients
1 cup GF oat milk( or rice / almond milk)
3 tablespoons maple syrup
½ cup mashed banana
1 medium egg ( or if egg free, 1 tbsp flaxseed meal with 2.5 Tbsp water)
1 teaspoon vanilla
2 cup gluten-free oats
¼ teaspoon salt
1 teaspoon cinnamon
1 teaspoon baking powder
1 tablespoon chia seeds
1 cup zucchini, shredded, let stand for 10 mins and gently press out excess liquid
1/4 cup chips
